time to kickback and savor the weekend… or if you’re like me, your weekend has suddenly become jam packed. But all in all it’s all GREAT stuff and I’m thrilled, it will be tons of fun. I leave you with the hope that you will enjoy a moment with good friends and maybe a refreshing beverage or two, possibly this cucumber gimlet.

Below is the recipe thanks to the help of my wonderful and gifted culinary friend Kim Donlon.

Cucumbers are sort of the forgotten veggie (in my opinion) and I have to admit I have great fondness for them. My parents have grown these tasty treats in their garden for as long as I can remember and honestly, theirs are the best. Cucumbers have extraordinary range, whether they are to sooth my poor eyes, fresh from the garden with a dash of salt or thrown into my water glass for a little extra zing in my refreshment (my favorite!!). I take great pleasure in all of it’s variances.

When Kim had me over a few weeks ago and told me about the drink we were having I had to blog about it. It was Deeeelicious. Very smooth (maybe too smooth), refreshing and unusual. Thanks Kim!

Cucumber Gimlet

2 large cucumbers (1 1/2 pounds total)
1/2 cup gin*
4 teaspoons fresh lime juice
1 tablespoon sugar
4 lime slices
Sprite (optional)
Ice

Slice four 1/4-inch-thick slices from 1 cucumber and set aside. Peel and coarsely chop remaining cucumbers; transfer to blender or food processor and purée until smooth. Pour through strainer set over a bowl, pressing on solids in strainer. Discard solids in strainer.

Mix 1 cup cucumber juice, gin, lime juice, and sugar in pitcher; stir until sugar dissolves. Pour 1/2 cup into a cocktail shaker, shake well. Immediately strain into two Martini glasses. For a lighter drink, splash with Sprite. Garnish with lime and cucumber slices and serve. Repeat with remaining drink.

*Hendrick’s Gin has a slight cucumber flavor and is excellent for this cocktail.
